He’ll probably also be able to pick up some negative emotion bubbling beneath the surface as well though -- Zam has a lot of hang-ups about their death and their time on the Moira has been far from 100% peachy.
On a sliding scale of light-to-dark, where does your character fall, and can Kylo notice this? Probably at the middle or close to it. Zam’s a hired killer who’s motivated by the promise of money and adventure, but they’ve also been known to stick their neck out to do the right thing from time to time (they’ve stopped a terrorist group from killing millions of civilians on Coruscant even though they knew they’d receive no reward or recognition for it, swooped in to save Jango from a future of slavery and torture even after he left them for dead, and always sends a good chunk of their earnings back to freedom fighters on their homeworld). They also have a soft spot for kids and are actually pretty easy to get along with so long as no one’s hired them to kill you.

This is a big one: is Kylo allowed to use the Force to rummage through your character's thoughts and/or memories and extract information? Absolutely!

Force jumps and you? (AKA: Force assault and you?) Sure!
Finally, does your character have any special powers beyond that of a baseline human? Zam is a shapeshifter! They made extensive use of this ability as a bounty hunter, but on a more day-to-day basis, they use it more or less casually based on how they want to look on any given day. Pretty much everyone on the ship knows they’re a changeling, so they don’t bother hiding it. However, due to negative experiences the crew has had embarking to planets before, Zam does still use their shapeshifting to disguise themself when they’re planetside.
They also make limited use of their shapeshifting in combat, particularly their unique ability to shift their skeleton as well as their flesh and skin (an ability not found in other Clawdites and a source of much xenobiological speculation after their death in EU canon). They generally only use this ability defensively, for example to prevent an opponent from twisting their ankle by altering how the joint fits together.
